I don't eat much spicy food these days as the plumbing complains if I do so I'm trying a sweet chilli packet mix. I hope it's not hot, never had it before.
Just got the chicken thighs out of the oven and I must say it smells good.
Got some Pilau rice & garlic bread to go with it Yum.
As, I imagine, might the folks at the Royal Mail.
It would seem accurate after a curry.....

Stayed at a lovely c1937 pub in Yamba last night... The view from the restaurant & our room in the aptly named Pacific Hotel is just amazing...
The tasty Sweet Chilli Baby Octopus entree & the perfectly grilled Swordfish main were delicious (not to mention the accompanying bottle of Reisling) but Mrs Eggs & I weren’t enamoured with their dessert menu selections... No matter, coz ya gotta love a pub that has its own Artisan Chocolates bar...
Oh wow Stu, that view is absolutely beautiful.... Ok so is the candy.

Took Sis in law out for her birthday today, a place of her suggestion and we’d never been to before.
Sitting overlooking the Tambo River in the foreground and munching my way through this was an experience! Everything was amazing esp. the pineapple & beetroot...no really it was the salad that was amazing~
I almost finished it but in the end it defeated even me, who is renown as a scoffer of hamburgers par excellence.
Too much lovely food and only $23. Good call Roz!
Blimey Digger that looks very tasty, I went shopping yesterday for a few things and ended up buying some sausage meat and Sage, must have been having a dry run for Christmas in my head
Made sausage meat balls wrapped in bacon & a batch of Sage & onion stuffing, It tasted very festive
Maybe I should get some prawns and have a praccie for Christmas Ian?
Wonder what they taste like wrapped i bacon? Nah that would over cook the prawns which only need to be waved over the heat!

Here’s a nice easy one...
Lemon & Herb Marinated Grilled Chicken Thighs
Combine in a small bowl:
1/2 cup EV Olive Oil
Juice & zest Of 4 Lemons
5 sprigs each finely chopped Sage & Rosemary
2 crushed cloves Garlic
1/2 teaspoon crushed Dried Chilli
Massage marinate into up to 8 Chicken Thighs (skin on or off as you prefer) & allow to marinate overnight.
Grill on BBQ with topped & tailed Lemon Halves (to caramelise) & serve with a leafy green salad.
Once again, chicken thighs for the win.
