    Prepared a couple of Leek, Beef Mince & Potato Bakes... The big one for us, the smaller one for Rosie’s parents.

    ... &, balancing our meat consumption, this was very tasty also & used up the remainder of the beautiful Leeks I had purchased.

    Not sure whether I prefer the Slow Cooked Roast or the subsequent, but yet to be topped with Mashed Potato, Shepard’s Pie more :hmm:... but I think the 2014 Archer’s Point Coonawarra Cabernet Sauvignon we had with the roast seriously blurred my judgement :dunno:

    Double yum! At the farmer’s market, there was a girl selling ready to heat meals, and one of her offerings was vegan Shepherd’s pie. We gave her no end of ribbing about how she probably assembled these pies using purely vegan shepherds!

    TURKISH STUFFED EGGPLANT

    Semi peel eggplants & bath in heavily salted water

    Prepare skinned diced Tomato, finely chopped Green Capsicum & Onion, & a Tomato Paste, Cumin, Fennel, Cardamon, Sweet Paprika & chopped Flat Parsley paste

    Cook off prepared items, then brown Mince Beef in this mix

    Dry eggplants with paper towel then pan fry in vegetable oil evenly on all sides

    Pat excess oil off eggplants

    Cut in half lengthways & scoop out centres (I chop & freeze these for inclusion in a later Dahl)

    Firmly fill half eggplants with meat mixture

    Shallowly surround with some half Passata half water mix & bake in a 180C preheated oven for 30 minutes (Note: use a lifter, not tongs, to serve, & please don’t be tempted to put cheese on these, as it simply doesn’t work)

    Yum those look tasty Stuart,Digger, I got some aubergine seeds for next year to grow in the greenhouse.
    I harvested a load of tomatoes,capsicums & onions yesterday to make pasta sauces with some garlic & tomato puree. I put them in individual freezer bags in the freezer for the next few weeks meals.

    I made meatballs & spaghetti for tea last night with some of the tomato sauce I made from ingredients out of the greenhouse last week. Capsicums,tomatoes,clove of garlic & 1 tbl spoon of tomato puree.
    It went down very well judging by my T-shirt :D with a garlic baguette.

    We did a tomato cook down with the appropriate herbs and onions with ground beef mince and elbow macaroni. Old school one and a half skillet meal, the half being the pot in which the pasta boiled.

    I sliced a pile of tomatoes and have set them out for drying. Later in the year I’ll extract the seeds to grow a new crop.

    Pork schnitzel sandwiches on brioche buns and steak fries, a nice rich slice of tomato on the side.
