I'd made Sous Vide Corned Beef for St. Paddy's so last night was corned beef hash with some scrambled eggs.

There should be some of the hash leftover, so I'll probably mow through that here in a bit. Eggs are probably more than I wanna do right now, but that sounds good.

Rigatoni & Chicken Cacciatore, mushroom tomato sauce. I could've sworn that I made enough for leftovers to get a couple of dinners out of a 1/2 lb of Pasta, a jar of sauce & 3 chicken thighs. 4 plates later, it's gone. I couldn't stop eating it was that delicious. Maybe if I had made a loaf of garlic bread too, I'd have a meal or two for Friday ?

Some sort of not quite stir fry, not quite fried rice thing that SWMBO threw together. Threw some Tamari sauce on it and chowed down.

While I don't necessarily count this as a favorite, some of the stuff she's "thrown together" have become go to menu items.

Mr pie man strikes again :dude: I made some corned beef & potato pies yesterday plus a chicken & prawn fried rice for our daughter as she only eats gluten free foods.

We had some great hot dogs from the butcher shop - no Oscar Meyer here! - on brioche buns, and I’ve found a great mustard sauce that has all the ingredients of a Chicago style dog* blended together, so stuff isn’t falling on your shirt. Gonna see if I can’t replicate it, as it ain’t cheap.

We made large homemade pizzas the other night and the one I made was satay Chicken with prawns dotted around. Cooked thinly cut red onions , thinly sliced mushrooms and plenty of satay sauce. Of course lots of Mozzarella cheese on the top. Nice then and still standing up reheated a couple of days later! I prefer the air fryer for reheating pizza because if you time it right you get a slight crunch yet not drying out.

We’re doing the delayed St. Pat’s meal, with corned beef brisket, colcannon, and roasted carrots. I’m adding some steamed asparagus, because I need to finish it, as the bride won’t touch it. And of course, a Guinness to compliment the meal! Might have to take a photo.

I got a few packs of diced pork shoulder, mince/ground pork & belly pork which had been reduced by 30% because it was on the sell by date from the supermarket. I minced a lot of it in the grinder to make some sausages but decided to make some sausage rolls & pork pies instead, Most were for the freezer & I made Meatballs & spaghetti with the remaining pork mince.

Finished the last of the corned beef in a Reuben casserole, or hot dish to some! The bride made the Thousand Island sauce and added rinsed sauerkraut - she’s not a big fan, so rinsing the juice off makes it more palatable - then layered it up with the meat, sauce, Swiss cheese, and topped it with her rye bread croutons.
